In Good Spirits: Trends tipple when vodka goes organic

Voya's Harvest Cocktail
Jay Jones, head bartender at Voya in the Loden Hotel, created this fresh cocktail to make the most of the unique flavour of Prairie Organic Vodka.

You can use premium store-bought brands of carrot and apple juice, but for the ginger juice, Jones recommends using a hand-press and squeezing your own. Also, he says, "Heavier juices do not fare well when shaken, as they become frothy from incorporating too much air. Rolling (or rocking) is the best technique - slowly and repeatedly pouring the liquid and ice back and forth between the two halves of a Boston shaker."

2 ounces Prairie Organic Vodka
1 ounce fresh carrot juice
_ ounces? fresh ginger juice
1 ounce organic apple juice
2 dashes Fee Brothers' Peach Bitters (available at Gourmet Warehouse)
Combine all ingredients with ice in a mixing glass. Gently roll between mixing glasses a few times to chill and blend. Strain into a single highball glass and top with fresh ice. Serves 1.
